Sattvic foods are ripe, raw, or lightly cooked and freshly prepared. Foods that are old or not prepared properly are not sattvic. The sattvic diet is high in nutrient-rich plant foods and low in processed and fried foods. Sattvic foods are known to uplift purity, boost health, harmony and well-being in the body. This diet comprises pure unprocessed food that is light in potency and rich in pranic energy.

Eating the right kind of nutritious food for your body type (prakruti) maintain vitality and balance, while eating the wrong kind creates imbalance in the doshas. Eating spicy food, sour, citrus and drinking acidic drinks all increase heat and acidity in the body, something a Pitta body type cannot afford. Eating dried fruits, beans, cold foods, raw salads will aggravate Vata for a vata body type. Eating dairy products, cold foods, cold drinks and fatty dried foods will escalate Kapha for a Kapha body type. So, we can see how the diet can create imbalance if you are unaware of your body type. 

Eating wrong food combinations, consuming stale food, consuming late at night, food with chemicals and eating in rush could all lead to poor digestion and imbalance in our body. 

Food and diet is therefore main driver of health and as per Ayurveda, Satvic diet along with consuming food according to the guidelines for our body type is critical in maintaining healthy balance.
